Fried Liver & Onions 2  Basic-Recipes.com9/12/06

1 pound of liver
1/4 cup of flour
1 teaspoon of salt
1/8 teaspoon of seasoned pepper
2 cups of onions, chopped
1/4 cup of bacon drippings

Thinly slice liver, remove any skin from edges. Cut as for French fries. Combine the flour, salt, pepper and liver slices in paper bag and shake well to coat liver. Let stand on cookie rack for 10 minutes. Fry the liver and onions in bacon drippings for 10 - 15 minutes or until all the pieces are brown and all redness is gone from outside. Place on heated platter and serve immediately. Makes 4 servings
