Fighting Irish Potatoes and Liver

1 pound of liver, sliced thin
1 quart of thinly sliced potatoes
1 small onion, minced
Salt and pepper
2 tablespoons of bacon fat
1 1/2 cup of milk
Flour

Salt and flour liver; brown lightly in bacon fat. Place a layer of raw potatoes in a greased baking dish; sprinkle with salt and pepper. Add some of the liver and onions; continue until all are used. Top layer should be potatoes. Pour on milk, cover, and bake for about 1 hour in a moderate oven (350ºF.) or until potatoes are tender. At the last, remove cover and allow potatoes to brown on top.
