Braised Liver & Vegetables

1 pound of beef liver
1/8 pound of bacon
1 sliced onion
1/4 cup of diced celery
2 carrots, sliced
2 cups of canned tomatoes
1/2 teaspoon of salt
1/8 teaspoon of pepper
2 tablespoons of melted fat
1/2 bay leaf
1 1/2 teaspoon of flour

Cut liver in 2-inch square pieces. Dip in flour and fry until brown. Place in casserole dish. Brown onion, celery, carrots and bacon. Add to casserole. Add remaining ingredients and mix. Cover tightly and cook at 350ºF. for 1 1/2-2 hours. Serves 6.
