Lima Bean Supreme

Two 10 ounce packages of frozen lima beans
1 cup of sour cream
3/4 cup of Cheddar cheese, shredded
1 cup of cottage cheese
1/2 cup of milk
2 tablespoons of butter
3 hard-cooked eggs, chopped
1 small onion, chopped
2 tablespoons of flour
1 teaspoon of salt
1/4 teaspoon of mustard
One 2 ounce jar of pimento, drained, chopped
1/2 teaspoon of garlic powder

Cook lima beans according to package directions. Drain well. Preheat oven to 350ºF. Place limas in a 2 quart dish. Set aside. Place all ingredients listed above, except lima beans in a saucepan. Cook over low heat until sauce is thick. Pour over prepared beans and stir well. Bake at 350ºF. for 30 to 35 minutes.

Lima Bean Supreme

1 pound of lima beans, soak overnight. Drain, add water and boil for 45 minutes, drain again. Mix in a baking dish:

Beans
1/2 pound of butter
1/2 cup of brown sugar
1 tablespoon of dry mustard
1/2 pint of sour cream
1 teaspoon of molasses

Bake for 1 hour at 350ºF.  Stir once during baking time. Makes 6 servings
