Creole Lima Beans

4 slices of bacon
1/4 cup of onion, chopped
Bacon grease
Salt & pepper
1 can of stewed tomatoes
1 can of baby lima beans

Fry 4 slices of bacon until crisp. Add 1/4 cup chopped onion. Sauté in bacon grease until brown. Add a little salt and pepper, 1 can of stewed tomatoes and a can of baby lima beans. Cook for 20 or 30 minutes or until thickened.

Creole Lima Beans

1 pound of dried large lima beans
6 cups of water
1/2 pound of bacon, diced
1 onion, chopped
1 green pepper, diced
1 tablespoon of all-purpose flour
2 teaspoons of seasoned salt
1/2 teaspoon of salt
1/4 teaspoon of pepper
2 teaspoons of prepared mustard
1 teaspoon of Worcestershire sauce
2 tablespoons of brown sugar
2 1/3 cup of  tomatoes

Cover washed beans with water. Bring to boil and boil 2 minutes. Cover and let stand 1 hour. Then cook until tender. Cook bacon in large skillet until crisp. Remove and drain. Add onion and green pepper to bacon drippings in skillet and cook for 5 minutes.
