Barbecued Lima Beans
1 pound of dried lima beans 4 cups of water 1/4 cup of chopped onion 1 cup of brown sugar 1 cup of catsup 2/3 cup of dark corn syrup 1 1/2 teaspoon of salt 1 teaspoon of liquid smoke 5 drops of Tabasco sauce 6 bacon slices |

Wash beans and soak in water overnight in large saucepan or Dutch oven. Do not drain. Add onion; bring to boil and simmer until beans are almost tender, about 30 minutes. Combine all other ingredients except bacon; stir into beans and mix well. Spoon mixture into 2-quart greased casserole. Put bacon strips on top; cover and bake at 350ºF. about 1 hour or until beans are tender. Yield: 8-10 servings. Barbecued Lima Beans 2
One 10 ounce package of frozen limas 1/2 cup of chopped onion 1/2 cup of chopped green pepper 3 tablespoons of salad oil 2 tablespoons of brown sugar 2 tablespoons of prepared mustard 1 teaspoon of Worcestershire sauce 1 teaspoon of salt 3/4 cup of ketchup
Place lima beans in boiling water and boil 10-15 minutes. Heat oven to 350ºF. Combine remaining ingredients in a small saucepan. Simmer 5 minutes. Drain limas and pour into quart size casserole dish. Stir in sauce. Bake about 30 minutes. Stir 1 time while baking. |
