Baked Lima Beans

2 cups of dried Limas
4 slices of bacon or salt pork
1 medium onion
1 green pepper
1 cup of canned tomatoes
2 teaspoons of salt
1 teaspoon of mustard
2 tablespoons of brown sugar

Soak beans overnight in cold water. Drain, add 2 quarts of fresh water and boil until tender. Pour beans in buttered casserole. Add minced pepper, onion, tomatoes and seasoning and mix. Put bacon or salt pork on top and bake, covered. Add water if necessary. Bake 2 hours at 325ºF. Uncover for the last 20 minutes. 

Baked Lima Beans 2

6 slices of bacon
1/4 cup of minced onion
1/2 cup of chopped celery
2/3 cup of light molasses
1/3 cup of catsup
1 teaspoon  of prepared mustard
1 teaspoon of salt
3 cups of cooked lima beans
1 cup of liquid from beans

Cut 2 slices bacon in small pieces. Fry crisp. Remove. Cook onion and celery in bacon fat until brown. Add remaining ingredients except uncooked bacon. Pour into greased casserole. Top with bacon slices. Bake in oven at 350ºF.  for 60 minutes.
