Alpine Fruit Dessert

2 envelopes of unflavored gelatin
1/2 cup of orange, pineapple, or apricot juice
4 egg yolks
1 - 2 tablespoons of honey or sugar
1/4 teaspoon of grated lemon rind
2 cups of coarsely chopped fresh fruit, such as strawberries and bananas, blueberries and strawberries, or apples and raisins
2 cups of plain yogurt
4 egg whites, beaten until stiff
fresh fruit of your choice for garnish

Place the gelatin in top of double boiler, pour orange, pineapple or apricot juice on top and let soak for 5 minutes. Heat over hot water, stirring constantly until the gelatin is completely dissolved.

In a mixing bowl, beat the egg yolks until light. Stir in the honey or sugar, lemon rind, lemon juice and chopped fresh fruit. Stir in gelatin mixture and yogurt. Fold the beaten egg whites into fruit and yogurt mixture. Spoon into dessert dishes or tall parfait glasses; refrigerate until firm. Garnish with fresh fruit. Serves 6
