Pineapple Fritters 1

1 1/4 cup of all-purpose flour
1 1/2 teaspoon of baking powder
1/4 teaspoon of salt
2 teaspoons of sugar
1 egg, slightly beaten
1/4 cup plus 2 tablespoons of milk
1 tablespoon of vegetable oil
8 ounce can of crushed pineapple, drained
Vegetable oil
Glaze

Combine flour, baking powder, salt and sugar in a large bowl. Stir well. Set mixture aside. Combine egg and next 3 ingredients in a small bowl. Mix well. Add egg mixture to dry ingredients. Stir mixture until moistened. Pour oil to depth of 2 or 3 inches into an electric fry pan. Heat to 375ºF. Carefully drop batter by rounded tablespoons into oil. Cook only a few at a time, turning once. Drain on paper towels. Pour glaze over fritters. Makes 1 1/2 dozen fritters.
