Cauliflower Fritters

1/2 cup of self raising flour
2 cups of plain flour
1 Whole cauliflower
1 Zucchini, (skin removed and grated)
1/2 teaspoon of salt and pepper
2 cups of parmesan cheese
1/4 cup of chopped parsley
5 Eggs
Water

Mix flours, salt, cheese, parsley with eggs and a little water. Whisk with a fork. Blanch the cauliflower and toward the end add the grated zucchini and blanch for 1 minute. Strain, both the cauliflower and zucchini and add to the batter. Allow to rest for 30 minutes before taking a spoonful and frying in a little oil for 1-2 minutes on each side.
