Artichoke Fritters 2

1/2 pound of Artichoke hearts, cooked and chopped
4 Eggs, separated
1 teaspoon of baking powder
3 Green onions, chopped
1 tablespoon of grated lemon peel
1/2 cup of flour
Salt and pepper to taste
1 tablespoon of cornstarch
4 cups of oil for frying, peanut 

Place artichoke hearts in a large bowl and stir in egg yolks and baking powder. Add green onion. Fold in lemon peel. Mix in flour, salt and pepper. In a separate bowl, beat egg whites and cornstarch together until peaks form. Fold egg whites into artichoke mixture. Heat oil to 360ºF.  With a tablespoon, drop half dollar sized dollops of fritter batter into oil. Fry until golden brown, maintaining oil at 360ºF. Remove fritters with a slotted spoon and drain on paper towels. Serving Size: 6
