
| Eggplant Fritters
2 medium eggplants 1 egg, well-beaten 1/2 teaspoon of salt 1 cup of all-purpose flour 1/2 cup of sugar 1 teaspoon of baking powder Dash of salt |
| Boil eggplants, cubed, in salty water until tender; mash with a fork. Combine eggplant, egg and salt. Mix thoroughly. In a mixing bowl combine flour, sugar, baking powder and salt; add enough flour to make batter hold its shape. Drop batter from spoon into hot oil. Fry until brown. | |
