| Holiday Cranberry Bread
1 cup of sugar 1 tablespoons of grated orange peel 3/4 cup of water 1/3 cup of orange juice 2 tablespoons of oil 1 egg 2 cups of all-purpose flour 1 1/2 teaspoon of baking powder 1 teaspoon of salt 1/2 teaspoon of baking soda 1 cup of halved fresh or frozen whole cranberries (do not thaw) 1 cup of chopped nuts |

Heat oven to 350ºF. Grease 9 x 5 inch loaf pan. In large bowl, combine sugar, orange peel, water, orange juice, oil and egg; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and baking soda; stir just until moistened. Stir in cranberries and nuts. Pour into greased pan.
Bake at 350ºF. for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator. Makes 1 (12 slice) loaf. Serves 12. |
