Cranberry Horseradish Canapés

1 1/2 cup of fresh cranberries
1 teaspoon of grated lemon peel, plus some thin strips for garnish
4 tablespoons of prepared horseradish
1/2 cup of sugar
4 ounces of whipped cream cheese
Crackers

In saucepan, combine cranberries with water to cover. Simmer 3-4 minutes, or until skins pop. Pour off water and mash hot berries with sugar, grated lemon peel and horseradish. Let cool. To serve, spread cream cheese on crackers and top with cranberry mixture. Garnish with strip of lemon peel.
