Crab Cheese Canapés

1 cup of crab meat
one 3 ounce package of cream cheese
1/2 cup of commercial sour cream
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/2 teaspoon of curry powder
1/16 teaspoon of cayenne
1 tablespoon of finely cut capers
1 tablespoon of finely cut chives



Drain crab meat. Remove all fibers by flaking carefully through the meat with fork. Grind coarsely. Blend cheese and sour cream smoothly. Season with salt, pepper, curry powder, and cayenne. Combine with ground crab meat. Add more sour cream if needed for good consistency. Mix in capers and chives. Serve on toasted crackers or rounds of buttered toasted bread. Makes about 2 1/2 cups of spread.
