Cheese Bacon Canapés

20 slices of bread
2 tablespoons of softened butter or margarine
3 slices of lean bacon
2 egg whites
1 1/2 cups of coarsely grated Swiss cheese
2/3 cup of finely cut green pepper
1 teaspoon of finely cut parsley
1/2 teaspoon of salt
1/2 teaspoon of oregano
1/4 teaspoon of pepper




Use a 2 inch cookie cutter and cut 20 rounds from bread slices. Toast rounds on one side. Spread untoasted side with softened butter or margarine. Cook the bacon until half done. Drain. Chop or cut in fine pieces. Start broiler at moderate 325ºF.  Whip egg whites until stiff. Fold cheese, green pepper, parsley, salt, oregano, and pepper into whites. Spoon onto buttered side of rounds. Sprinkle with bacon. Place on broiler pan.
Broil 4 or 5 minutes from heat until cheese melts and bacon is crisp, about 10 minutes. Makes 20 canapés
