Marinated Black-Eyed Peas 1

2 cups of cooked black-eyed peas
1 medium Red bell pepper, cut into 1" strips
2 minced scallions
3 tablespoons of minced fresh parsley
3 tablespoons of olive oil
Juice of 1 lemon
1 Garlic clove, crushed
Salt & pepper
Dark green lettuce leaves

Combine all the ingredients except the lettuce in a mixing bowl. Cover & let stand in the fridge for an hour or so. Stir occasionally. Before serving, remove garlic. Line a shallow serving bowl with lettuce leaves & top with the pea mixture. This recipe is better if prepared a day ahead. For real good luck, drop some coins into it before serving.
