Chipotle Sauce

4 chipotle chiles, stemmed
1 cup of boiling water
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon of oil
1 cup of catsup
1 tablespoon of chile powder
2 teaspoons of dry mustard
3 tablespoons of vinegar
3 tablespoons of brown sugar
2 teaspoons of Worcestershire sauce
Hot sauce



Rinse chiles. Pour boiling water over chiles and let them rehydrate and soften for 30 minutes. Puree in a blender. Sauté onion and garlic until soft. Add remaining ingredients; bring to a boil. Reduce heat and simmer for at least 1 hour. Puree sauce in a blender until smooth. Yield: 3 cups
