Pork Tenderloin w/Sherried Apple Rings

two 1 pound pork tenderloins, trimmed
1 teaspoon of salt
1/4 teaspoon of pepper
a dash of sugar
3/4 cup of all purpose flour
2 tablespoons of bacon drippings
Sherried Apple rings




Sprinkle tenderloins with salt, pepper, and sugar; dredge in flour. Insert meat  thermometer in thickest part of meat.

Melt bacon drippings in a shallow roasting pan. Place tenderloins in pan; bake, uncovered, at 350ºF. for 50 minutes or until thermometer registers 170º, basting occasionally.

Remove tenderloins to a serving platter, and arrange Sherried Apple rings around meat. Spoon cooking liquid over apple rings. Slice meat and serve with apple rings. Yield: 6 servings
