Harvest Walnut Pie

1 ready prepared graham cracker crust
2 egg yolks
1 cup of sugar
4 tablespoons of flour
1 cup of sour cream
1/2 teaspoon of walnut extract or vanilla extract
1/4 teaspoon of lemon rind
1/2 cup of walnuts, finely chopped 

Topping:
2 egg whites
1/4 teaspoon of cream of tartar
1 cup of brown sugar
1/2 cup of walnuts, coarsely chopped
1/4 teaspoon of walnut extract

Mix egg yolks, sugar, flour, sour cream, walnut extract, lemon rind and walnuts together. Cook in the top of a double boiler over boiling water. Stir with wire whisk until thickened and pour into pie shell. For the topping, beat the egg whites with cream of tartar until they form soft peaks. Add the brown sugar, walnuts and extract. Spread over filling. Bake at 325ºF. for 15 minutes, or until brown. Serves 6 to 8
