| Cranberry Apple Cobbler
2/3 cup of sugar 1/3 cup of flour 4 cups of sliced apple 2 cups of whole cranberry sauce 1 cup of flour 2 tablespoons of sugar 1 1/2 teaspoon of baking powder 1/2 teaspoon of baking soda 1/2 teaspoon of salt 1/4 cup of shortening 1/3 to 1/3 cup of milk |
| Mix the sugar and flour, turn in apples. Dump into 2 quart baking dish. Spread cranberry sauce on top. Bake at 400ºF. for 5 minutes. Stir together remaining ingredients. Drop by spoonfuls onto fruit. Bake 15 to 20 minutes at 400ºF. until topping is done. Makes 6 to 8 servings Cranberry Apple Cobbler 2
1 1/2 cups of cranberries, picked over 1 Granny Smith apple, peeled, thinly sliced 1 tablespoon of Freshly grated orange zest 1/2 cup of firmly packed light brown 1/4 teaspoon of cinnamon A pinch of ground cloves 1/2 cup Plus 1 tablespoon flour 1 tablespoon of unsalted butter; cut into pieces 1/2 teaspoon of Double-acting baking powder 1/4 teaspoon of salt 2 tablespoons of vegetable shortening 1/3 cup of plain yogurt 1/2 teaspoon of granulated sugar Vanilla ice cream as desired
In a shallow 2-cup baking dish toss together the cranberries, the apple, the zest, the brown sugar, the cinnamon, the cloves, and 1 tablespoon of the flour and dot the top with the butter. In a bowl stir together the remaining 1/2 cup flour, the baking powder, and the salt. Add the shortening, blend the mixture until it resembles coarse meal, and stir in the yogurt. (The dough will be sticky.) Drop the dough by spoonfuls onto the cranberry mixture, sprinkle it with the granulated sugar, and bake the cobbler in the middle of a preheated 400ºF. oven for 30 minutes, or until the top is golden.
