Caramel Nut Apple Pie

1 1/2 cups of heavy cream, un-whipped
3/4 cup of brown sugar
1/3 cup of butter
1 ounce of sweet chocolate
1 cup of chopped mixed nuts
1 deep dish apple pie, baked and cooled

 

In a heavy saucepan, combine the cream, brown sugar, butter and chocolate. Bring to a boil and cook over medium heat until mixture lightly coats a spoon, about 15 minutes. Remove from heat and stir in nuts. Set aside to cool slightly. Invert cooled pie onto serving dish and spoon caramel nut mixture over top so it runs down the sides. Chill thoroughly before serving. Serves 8
