Stuffed Peppers with Anari And Feta Cheese

 

Ingredients:

3 Mixed peppers
3 Egg yolks
175 g Feta cheese; (6oz)
275 g Anari cheese/cottage cheese;
1/2 ts Dried mint
1/4 ts Ground black pepper
 

Cooking Instructions:

Preheat the oven to 190ºC/375ºF/gas mark 5 Cut the peppers in half lengthways and remove the seeds and core. Place the two cheeses and egg yolks in a medium bowl and mix until blended together. Stir in the dried mint and black pepper. Spoon the cheese mixture into the pepper halves. Place on a baking sheet in the oven for 10-12 minutes until golden brown and bubbling. Serve warm or at room temperature with a green salad.
