Zucchini Lemon Bars

 

Ingredients:

295.7 ml SUGAR
236.6 ml OIL
3.0 EGGS
9.9 ml LEMON RIND; GRATED
59.1 ml LEMON JUICE
414.0 ml ZUCCHINI; SHREDDED
473.2 ml FLOUR
1.2 ml BAKING POWDER
9.9 ml SODA
4.9 ml SALT
236.6 ml WALNUTS; CHOPPED
0.0 POWDERED SUGAR; SIFTED




Cooking Instructions:

Combine 1 1/4cups sugar, oil, eggs, lemon rind, and lemon juice in a large mixing bowl; mix well. Stir in zucchini. Combine flour, baking powder, soda, and salt; gradually add to zucchini mixture, stirring well. Stir in walnuts. Pour batter into a greased 13x9x2-inch baking pan. Bake at 350ºF. for 45-50 minutes or until a wooden pick inserted in center comes out clean. Cool; dust top with sifted powdered sugar. Cut into bars. Yield: 2 dozen
