Tamale Pie
1 cup of chopped onion 1 cup of chopped green pepper 1 tablespoon of salad oil 3/4 pound of lean
ground beef 1 large can of tomatoes (2 1/2 c.) one 12 ounce can of
whole kernel corn, drained 1/2 cup of chopped ripe olives 1 clove garlic, minced 1 tablespoon of sugar 1 teaspoon of salt 1 teaspoon of chili powder a dash of pepper 1 1/4 cup of grated sharp Cheddar cheese |

Cook the onion and green pepper in oil until soft, not brown. Add meat and brown it. add tomatoes, corn, olives, garlic, and seasonings. Simmer for 30 minutes or until lightly thick. Add cheese, mix well. Pour into well greased 2 quart casserole dish. Top with Cornmeal Topping. Bake at 375ºF. for 40 minutes or until lightly browned. Cornmeal Topping: 3/4 cup of yellow cornmeal 1/2 teaspoon of salt 2 cups of cold water 1 tablespoon of butter or margarine
Stir cornmeal and salt into the cold water. Cook and stir until thick. Add butter. Mix well, pour over meat mixture.
