| White Bean & Sausage Rigatoni
8 ounces of packaged dried rigatoni one 15 ounce can of white kidney(cannellini), great northern or navy beans, rinsed & drained one 14 1/2 ounce can of Italian style stewed tomatoes 6 ounces of light fully cooked smoked sausage or fully cooked smoked turkey sausage, sliced 1/2 inch thick 1/3 cup of snipped fresh basil 1/4 cup of shaved or finely shredded Asiago cheese (1 ounce)
Cook pasta according to package directions, except do not add salt to cooking water. drain, keep warm. Meanwhile in large saucepan combine beans, undrained tomatoes and sausage, heat through. Add the bean mixture and basil to cooked pasta, toss gently to combine. Sprinkle each serving with Asiago cheese. Makes 4 servings |
