Pot Roast with Tomato Juice Basic-Recipes.com - 9/7/06

3 pounds of beef roast
2 tablespoons of cooking oil
2 onions, chopped
water
1 quart of tomato juice  

Brown beef in oil; cover with onions and water. Simmer until meat is tender and water evaporates. Add the tomato juice; simmer for 30 minutes. Makes 8 servings
