| | Old Fashioned Beef Pot Roast
1 tablespoon of flour 1/4 teaspoon of ground pepper 1/2 teaspoon of allspice 3 pounds of lean beef 1 1/2 tablespoons of vegetable oil 1 pint of boiling water or low sodium stock 2 onions 2 cloves
Mix the flour with pepper and allspice and dredge meat with the mixture. Melt the oil in a heavy pan. Brown meat on all sides, then add the boiling water or stock, onions and cloves. Cover and allow to simmer for about 3 hours or until the meat is tender. One half hour before meat is finished, potatoes may be added. Serves 6
Variation: Substitute 1 1/2 cups of prune juice for water or stock and add 8 whole prunes and 4 whole cloves to pot, then simmer. Variation: Substitute 1 cup of Burgundy for water and 1 small can of low sodium tomatoes, 1 carrot, and 1/2 teaspoon of basil to pot then simmer. |
