Lasagna Roll-Ups

Lasagna Roll-Ups 1

15 Strips lasagna
1 quart of Spaghetti sauce
1 cup of Shredded mozzarella cheese
FILLING
2 pounds of Ricotta cheese
1 cup of shredded mozzarella cheese
1/3 cup of grated parmesan cheese
3 Eggs, beaten
1 tablespoon of parsley
1 teaspoon of salt

 

I found this recipe in my "Mr. Food" Cookbook. My family enjoyed it, just a different take on Lasagna Preheat oven to 375ºF.  In a large pot of boiling water, cook lasagna until just barely tender. Meanwhile, in a large bowl, mix all the filling ingredients together. pour half the spaghetti sauce over the bottom of a 9 x 13 baking dish coated with a nonstick vegetable spray. Drain the lasagna, rinse, and pat dry. Lay the strips out flat and spread the filling evenly over each strip. Roll the strips up and arrange them in a backing dish seam side down. Pour remaining sauce over, and top with the mozzarella cheese. Bake for 35 to 40 minutes until bubble and golden brown. Let set for about 12 to 15 minutes before serving. NOTE: a one pound box of lasagna contains about 20 strips. Serving Size: 6

Lasagna Roll-Ups 2

SAUCE
1/2 pound of ground turkey
2 Garlic cloves, minced
1 Jar (32oz) spaghetti sauce
2 teaspoons of dried Italian seasoning
1/2 teaspoon of fennel seed, if desired
FILLING
8 Uncooked lasagna noodles
1 cup of low fat part-skim ricotta or
1/2 cup of shredded carrot
1 pk (9-oz) frozen chopped spinach
2 Egg whites -or-  1 Egg
1/4 teaspoon of salt
TOPPING
4 ounces (1 C) shredded low fat cheese

Heat oven to 350ºF.  In large skillet, brown turkey & garlic; drain if necessary. Stir in remaining sauce ingredients; simmer about 15min, stirring occasionally. Meanwhile, cook noodles to desired doneness. Drain; rinse w/ hot water. In small bowl, combine ricotta, carrot, spinach, egg whites & salt; mix well. Spread each cooked noodle w/ generous 1/4C spinach filling to within 1" of 1 short end. Roll up firmly toward unfilled end. Reserve 1-1/2C sauce. Pour remaining sauce in ungreased 12x8(2qt) dish. Arrange roll-ups, seam side down, in sauce. Pour reserved sauce over roll-ups. Cover; bake at 350ºF.  for 30-40 minutes or until hot & bubbly. Sprinkle w/ cheese. Bake uncovered an additional 3-5min or until cheese is melted. Let stand 5min before serving. 8 servings. 350 calories per serving.

Lasagna Roll-Ups 3

6 Lasagna noodles
1/2 pound of chopped meat; cooked 
1 1/2 cups of Ricotta cheese
1 cup of Mozzarella cheese, shredded
1/4 cup of parmesan cheese
1 Jar of spaghetti sauce

Brown the meat, drain and cool. While noodles are cooking, mix the chopped meat, ricotta cheese, mozzarella cheese and Parmesan cheese together. Lay noodles out flat and spread some of the cheese mixture over the length of it - be generous! Roll up noodle, place seam side down in pan and continue with rest of noodles. Lastly, pour the jar of sauce over all and sprinkle with Parmesan cheese. Bake for 30 minutes in a 350ºF.  preheated oven. NOTES : This may not be a "casserole" per se, but you can make it ahead (even a big batch and freeze portions as it is easily doubled, tripled, etc.) and just pop it in the oven when you get home. I add a bit extra cooking time when coming from fridge to oven, 10 minutes or so depending on your oven. My family loves this and it is so easy. You can even change the filling around a bit to add spinach or other favorites.
