Kofta Curry

 

Kofta Curry

1 medium onion, chopped fine
1/4 cup of butte
4 cloves
1 cardamon seed, crushed
2 coriander seeds, crushed
1/2 teaspoon of salt
freshly ground pepper
1 teaspoon of turmeric
1 tomato, peeled and chopped
1 green pepper, chopped fine
2 cups of water
1/4 cup of flour
1 tablespoon of minced fresh ginger
2 tablespoons of minced onion
1 slice of bread
1 pound of chopped lamb


Fry the chopped onion in butter in a 3 quart casserole until lightly brown. Meanwhile, whirl 2 of the cloves, the cardamon and coriander in the blender. Add, with salt, pepper, turmeric, and green  pepper, to the onions. Add water and simmer while preparing the meat. Brown flour in a dry pan, being careful not to burn it. Grind the remaining, cloves and add to flour with the ginger and minced onion. Soak the bread in water, wring it out and add to flour mixture with the chopped lamb. Mix well and form into balls. Simmer in the sauce about 30 minutes. Serves 4
