Curried Lamb

 

Curried Lamb
 
 
3 pounds of lamb, cut into 1/2 inch cubes (sprinkle with salt), or leg of lamb can be used
 2 large onions, chopped fine
 1 stick of butter
 4 cloves garlic, pressed
 1 large can of tomatoes, crushed and drained
 1 1/2 teaspoon of turmeric
 1 teaspoon of curry powder
 1/2 teaspoon of crushed red hot chili peppers
 1 cup of golden raisins
 1 cup of toasted slivered almonds




Sauté onions in butter until soft. Add lamb cubes and garlic. Cook, stirring until lamb is lightly browned. Add raisins and seasonings. Cover and simmer until lamb is tender (45 minutes). Add almonds before serving. Serves 6.
