Asparagus with Cubed Lamb 1 pound of cubed lamb 1 teaspoon of salt or to taste 1/2 teaspoon of pepper or to taste 1 garlic clove, crushed 2 cups of water 1 pound of asparagus, trim bottom, cut into 1 to 1 1/2 inch pieces |

Brown meat in butter, add water, salt, pepper, garlic and simmer for 3/4 hour. Add asparagus; thick parts first, let simmer 20 minutes. Add tips, add more water, if needed to cover. Simmer 15 minutes until tender. Serve with rice. 4 to 6 servings.
