Kabobs/Kebabs

Prepare mixed vegetables for kebabs by choosing vegetables with similar cooking times, then cut them into bite size pieces or lengths. Small vegetables such as cherry tomatoes are best kept whole. Green onions,, fennel, red onion, eggplant, and summer squash would also be appropriate vegetables for skewering. Metal skewers come in a variety of shapes and sizes. For best results, choose skewers that are square or flat, they will hold food more securely.

Make  your own Kabobs:

Set out bowls of ingredients and let your guest thread their own skewer. Broil over hot coals to medium rare, basting often with marinade.
Meats: Marinated Lamb Kabobs and Marinated Beef Cubes, ham cubes.
Vegetables: Small precooked or canned potatoes, tiny cooked or canned onions, squash, eggplant, green peppers, whole mushrooms, cherry tomatoes, cucumbers, pineapple chunks or whatever you wish. If using pepper and mushrooms, dip them first in boiling water for a minute ahead of time.
