Stuffed Peppers  1

6 medium green peppers
1 pound of ground chuck
2 cups of cooked rice
1 medium onion, diced Basic-Recipes.com9/19/06
salt and pepper to taste
1 large can of tomatoes

 

Parboil the green peppers for 10 minutes. Remove tops from peppers and dice tops into mixture of chuck, rice, salt, pepper and onion. Stuff peppers with ground chuck mixture. arrange in casserole and cover peppers with tomatoes. Bake at 350ºF.  for 1 hour and 30 minutes. Makes 6 servings

Stuffed Peppers 2

6 large green peppers
1 pound of ground chuck

1/2 pound of Longhorn cheese, cubed
1 slice of bread, cubed
1/2 cup of tomato sauce

Clean, core and parboil peppers. Cook the meat slowly in skillet, stirring frequently, until redness disappears. Sprinkle with salt and pepper. Add cheese. When cheese has melted, add just enough bread cubes to take up excess liquid. Pour tomato sauce into meat and stir well. Place drained peppers into greased, deep baking dish. Fill with meat mixture. Bake at 325ºF.  for 1 hour. Makes 6 servings
