Brown Sugar & Honey Glaze for Ham: Combine 1 cup of brown sugar packed, 1/2 cup of honey, 1/4 cup of ham fat. Spread over scored, skinned ham 45 minutes before it is done. Repeat basting every 10 minutes until ham is done. Garnish platter with canned peach halves sautéed in butter and honey
Christmas Glazed Ham: Combine 1/2 cup of honey, 1 cup of brown sugar packed, 1/4 cup of apricot nectar. Spread on scored, skinned ham as described for other glazes. Baste with same mixture twice during final half hour of baking. Decorate the top of ham with groups of green gumdrop or angelica leaves and cinnamon candies, to form holly leaves and berries
Currant Jelly & Horseradish Glaze for Ham : spread currant jelly mixed with a little prepared horseradish thickly over scored, skinned baked ham. Return pan to oven. Bake 45 minutes longer. Spread melted currant jelly over ham twice in this baking period.
Glazed Ham: Bake whole ham according to directions for the type you buy. About 45 minutes before it is done, remove pan from oven. Remove fat drippings from pan and cut rind off ham. Score at deeply with sharp knife. Mix glaze consisting of 1 tablespoon of grated orange peel, 1/2 cup of orange juice, 1 cup of honey. Pour about 1/3 of glaze over scored ham. Return pan to oven. Bake 45 minutes longer, basting ham with remaining syrup at intervals.
Raisin Sauce for Ham: 1/2 cup of sugar, 1 teaspoon of dry mustard, 1/4 cup of seedless raisins, 1 cup of red wine, 1 cup of water Mix all ingredients and cook together for 20 minutes. A glass of currant jelly added to this sauce makes a very pleasant addition to the flavor.
