| Baked Ham with Raisin Sauce
One 12 pound bone in fully cooked ham
GLAZE: 1 cup of brown sugar, packed 1 tablespoon of dry mustard Cloves (optional)
RAISIN SAUCE: 1/2 cup of brown sugar, packed 1 teaspoon of dry mustard 1 tablespoon of cornstarch 1 1/2 cup of water 1/4 cup of vinegar 1/2 cup of raisins 1 tablespoon of butter or margarine |
| Place ham, fat side up, on rack in shallow roasting pan. Insert meat thermometer. Bake at 325ºF. for 2 hours 10 minutes per pound to an internal temperature of 130ºF. 1/2 hour before and of baking time, pour off drippings; remove any skin. Cut fat into diamond shapes. Insert cloves, if desired. Cover with glaze. Return ham to oven for 30 minutes. Remove and allow to rest 15 to 20 minutes for easier carving. Raisin Sauce: Mix brown sugar, mustard, and cornstarch. Add water, vinegar, and raisins. Cook and stir until thick. Add butter; blend. Makes about 2 cups.
