Place the chicken in a shallow roasting pan skin side up. Season. Brush with the melted shortening. Broil until brown. Combine the remaining ingredients, except the wine and cherries. Pour over chicken in pan and cover with foil. Bake at 325ºF. for 1 hour. Add the wine and cherries the last 15 minutes of baking. Serves 16, can be cut down.
