Caviar & Deviled Eggs

5 eggs, hard boiled, shells removed
2 tablespoons of sour cream
1 teaspoon of onion, finely chopped
5 teaspoons of caviar
parsley sprigs

Slice eggs longwise. Gently remove yolks and place in small bowl. Add sour cream to yolks and blend well. Add onions and blend well. Spoon yolk mixture into hollow of egg white halves. Sprinkle each with 1/2 teaspoon of caviar. Garnish with a sprig of parsley. Serves 5.
