Baked Artichoke Savories

2 tablespoons of chopped green onion
1 teaspoon of pressed garlic
1 tablespoon of dry sherry
1 tablespoon of butter
3 egg whites
1 whole egg
2 tablespoons of parsley, minced
1/4 teaspoon dried dill
1/8 teaspoon of cayenne pepper
1 cup of mozzarella cheese, grated
1/2 cup of ricotta cheese
10 ounces of artichoke hearts, drained and chopped

Set oven to 350ºF. Lightly oil an 8-inch square baking pan. In a medium skillet over
medium-high heat, sauté onion and garlic in sherry and butter until soft but not browned. Lightly beat egg whites until soft peaks form. Spoon into a bowl and mix with beaten whole egg, parsley, dill, cayenne, cheeses, and artichokes. Add sautéed onion and garlic. Pour into oiled baking pan. Bake until set (about 30 minutes). Let cool; cut into 16 squares. Serve warm or cold. Serves 16.
