Tabasco Steaks
1 bunch of watercress or parsley 3 ounces of unsalted butter, softened 4 sirloin steaks, about 8 ounces each 4 teaspoons of Tabasco sauce salt and freshly ground black pepper |

Preheat the barbecue. Using a sharp knife, finely chop enough watercress or parsley to fill 4 tablespoons. Reserve a few leaves for the garnish. Place the butter in a small bowl and beat in the chopped watercress or parsley with a fork, until fully incorporated. Cover with plastic wrap and refrigerate until required.
Sprinkle each steak with 1 teaspoon of the Tabasco sauce, rubbing it in well. Season to taste with salt and freshly ground black pepper.
Cook the steaks over hot coals for 2 1/2 minutes each side for rare, 4 mediums each side for medium and 6 minutes each side for well done. Transfer to serving plates, garnish with the reserved leaves, and serve immediately, topped with prepared butter. Serves 4
