Strawberry Meringue Pie

4 cups of sugar free low fat vanilla ice cream, softened
1 frozen pie crust, baked
3 cups of fresh strawberries or frozen unsweetened, thawed
2 large egg whites
1/4 teaspoon of cream of tartar
1 1/2 teaspoons of aspartame sweetener


Spread the ice cream into pie shell, pushing it to the edges. Freeze all day or overnight. Just before serving, spread the strawberries on top of ice cream and preheat oven to 500ºF.  Put the egg whites, cream of tartar, and aspartame into an electric mixing bowl. Beat at high speed until the whites are stiff and form peaks but are not dry. Spoon the meringue on top of the strawberries using the spoon to make decorative peaks. Be sure all of the surface is covered right up to the crust. Put the pie on a wooden bread board and place it in the oven. Bake for 5 minutes or  until the meringue is lightly browned. Makes 8 servings
