| Cottage Cheese Pancakes 1/2 cup of low fat cottage cheese 4 egg whites 1 1/2 teaspoons of all purpose flour vegetable cooking spray Combine all of the ingredients, except the cooking spray, in a container of an electric blender, process until smooth. For each pancake, pour one fourth of the batter onto a hot nonstick skillet coated with cooking spray. Cook over medium heat, turning the pancakes once the tops are bubbly. repeat procedure until all batter is used. Makes 4 pancakes
