Cottage Cheese Omelet

1 egg
2 egg whites
1 tablespoon of water
1 teaspoon of dried parsley flakes
1/2 teaspoon of salt
1/4 teaspoon of dried whole marjoram
1/4 teaspoon of pepper
vegetable cooking spray
1 ounce of low fat cottage cheese

Combine the egg, egg whites, water and seasonings in a small bowl, stirring well. Coat a medium size nonstick skillet with cooking spray, place over medium heat until hot enough to sizzle a drop of water. Pour egg mixture into pan. as egg mixture starts to cook, gently lift edges of omelet with a spatula, and tilt pan so that uncooked portion flows underneath. when the egg mixture is almost set, spoon cottage cheese over half of omelet, continue cooking until the eggs are set. Loosen omelet with a spatula, and fold in half, slide onto serving platter and serve immediately. Makes 2 servings
