Baked Custard 

2 eggs
2 cups of skim milk
2 teaspoons of liquid sugar substitute
2 teaspoons of vanilla extract

Lightly beat eggs in a small bowl, add the remaining ingredients, and beat well. Pour the mixture into five 6 ounce custard cups and place cups in a pan containing 1 inch of hot water. Bake at 350ºF. for 45 minutes or until a knife inserted in the center comes out clean. Cover and chill thoroughly. Makes 5 servings
