Purple Plum Mincemeat Pie

Pastry for 2 crust, 9 inch pie, your own or a mix
3 cups of Purple Plum Mincemeat
2 cups of sliced tart apples
2 tablespoons of flour
2 tablespoons of sugar
2 tablespoons of butter or margarine
Hard Sauce (recipe below) or vanilla ice cream

Preheat oven to 425ºF. Line pie plate with pastry. In a large bowl combine Purple Plum mincemeat and apples. Mix flour and sugar, add to mincemeat apple mixture. Pour filling into pie crust, dot top with butter. Place top crust on filling. Cut steam vents in top crust, and flute edges. Bake about 40 minutes, until crust is golden and filling is bubbly. If crust gets too brown, cover edges with foil during the last 10 minutes of baking. Serve warm with Hard Sauce or soft vanilla ice cream.

Hard Sauce  (Makes about 1 cup)

1/2 cup of butter or margarine, softened
1 cup of confectioners sugar
2 teaspoons of pure vanilla extract

In medium bowl, beat butter and sugar together until fluffy. Add vanilla extract.
