Spicy Marble Squares

3/4 cup of granulated sugar
1/2 cup of shortening
1 egg
2 cups of all purpose flour
2 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of milk
2 tablespoons of light molasses
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1/8 teaspoon of ground cloves
6 tablespoons of butter, softened
1/2 cup of packed brown sugar
3 tablespoons of milk
2/3 cup of flaked coconut
2 ripe bananas

Instructions:

In a mixing bowl cream together the granulated sugar and shortening. Add the egg, beat well. Stir together thoroughly the flour, baking powder, and salt. Add to creamed mixture alternately with the 3/4 cup of milk, beating well after each addition. Divide batter in half. To one half add the molasses, cinnamon, nutmeg, and cloves, mix well. Spoon spiced and plain batters alternately into greased 9 x 9 x 2 inch baking pan. Zigzag spatula through batter to marble. Bake at 350ºF. until cake tests done,35 to 40 minutes. In a mixing bowl combine softened butter or margarine, brown sugar, and the 3 tablespoons of milk, stir in flaked coconut. Set aside. Slice the bananas diagonally in 1/4 inch thick slices. Arrange in a single layer atop warm cake. Spoon coconut mixture over bananas, spreading evenly. Broil 3 to 4 inches from heat for 3 to 4 minutes.
Serves 8 to 9
