Walnut Jumbo Cookies

1 1/4 cups of sifted all purpose flour
3/4 teaspoon of salt
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground ginger
1/2 cup of butter or margarine, softened
1 cup of light or dark brown sugar, packed
1 large egg
1/3 cup of molasses
2 cups of uncooked quick oats
3/4 cup of chopped walnuts
1/4 cup of chopped walnuts



Preheat oven to 350ºF.  Lightly grease cookie sheets. Re-sift flour with salt, baking powder, baking soda, and spices. In large bowl beat butter, sugar, and egg together well. Blend in molasses, then flour mixture, then oats. Stir in 3/4 cup walnuts. Drop by quarter cupfuls onto lightly greased baking sheets, allowing room for spreading; flatten slightly. Sprinkle top with 1/4 cup walnuts. Bake above oven center for 13 to 15 minutes, until lightly browned. Let stand on sheets about 5 minutes, then use broad spatula to lift onto wire racks to cool. Makes 12 (5-inch) cookies.
