Basic Cookie Mix

3 cups of all purpose white flour, preferably, unbleached or part white and part whole wheat flour
1 1/2 cups of granulated sugar
1 cup of dark brown sugar, firmly packed
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of solid shortening, butter flavor Crisco preferred

Combine all dry ingredients in large bowl. Cut in shortening with pastry blender until mixture resembles coarse meal. Store in container with tight-fitting lid.
Makes approximately 8 cups.
