Apricot Balls
1 1/2 cup of dried apricots (6 oz.), ground 2 cups of moist shredded coconut 2/3 cup of Eagle Brand sweetened milk (1/2 can) Confectioners' sugar
In large sized mixing bowl mix together apricots and coconut. Stir in Eagle Brand milk. Shape into small balls and roll in confectioners' sugar. Let stand in air until firm. (Makes about 40-48.) |

Apricot Balls 2
One 8 ounce package of dried apricots 1 1/2 cup of flaked coconut 2 tablespoons of confectioners' sugar 2 teaspoons of orange juice 1 cup of sugar for coating
Make ahead for holiday treats and store in airtight containers. Grind apricots. Mix first 4 ingredients with hands. Shape into balls the size of large olives. Roll individually in sugar to coat. Place into candy papers or store loosely in airtight container in refrigerator with clear wrap between layers. Apricot Balls 3 1 cup of dried apricots 1/2 cup of walnuts 1/2 cup of coconut 2 tablespoons of wheat germ 1/4 cup of orange juice 1/2 cup of finely chopped walnuts Place the apricots, 1/2 cup of walnuts and coconut through food grinder. Add wheat germ and orange juice, mix well. Form mixture into 1 inch balls. Roll in chopped walnuts. Refrigerate until chilled. Makes 2 dozen Apricot Pecan Balls 4
1 1/2 cup of crushed vanilla wafers (38 cookies) 1 cup of chopped pecans 1/2 cup of powdered sugar 1/2 cup of snipped dried apricots 1/4 cup of light corn syrup 2 tablespoons of apricot brandy 1/2 cup of sifted powdered sugar
In a bowl stir together vanilla wafers, pecans, 1/2 cup powdered sugar and the apricots. Stir in corn syrup and brandy. Using one level tablespoon for each cookie shape mixture into balls. Roll each ball in powdered sugar. Store in a covered container. Makes 3 dozen cookies.
Apricot Nut Balls 5
8 ounces of dried apricots, finely chopped 2 1/2 cups of flaked coconut 2/3 cup of walnuts, chopped 3/4 cup of sweetened condensed milk Powdered sugar
Mix apricots, coconut, walnuts and milk. Shape into 1 inch balls. Roll in powdered sugar. Let stand until firm, approximately 2 hours. Makes 3 1/2 to 4 dozen. Apricot Balls 6
2 cups of apricots (dried) 1 cup of coconut 1 cup of chopped walnuts 1 tablespoon of lemon juice Rind of 1 lemon (grated) 1 pound of confectioners sugar
Grind apricots. Mix all ingredients and roll into balls. Roll balls in granulated sugar. Apricot Balls 7
16 ounces of package dried apricots 1 can of Eagle Brand condensed milk One 16 ounce package of angel flake coconut 1 1/2 cup of chopped nuts 4 tablespoons of undiluted orange juice 8 heaping tablespoons of powdered sugar
Put apricots, coconut and nuts through a food processor. Put mixture into a bowl and add milk, orange juice and powdered sugar. Refrigerate overnight. Shape into balls and roll in additional coconut. Store in refrigerator. These freeze well. Apricot Brandy Balls 8
6 squares of semi-sweet chocolate 1/2 cup of brandy 3 tablespoons of light corn syrup 2 1/2 cups of wheat bran cereal, crushed 1 cup of finely chopped, dried apricots 1/2 cup of confectioners' sugar Unsweetened cocoa powder
Melt chocolate in top of double boiler over hot, not boiling water. Remove from heat. Stir in brandy and corn syrup. Combine bran cereal, apricots and 1/2 cup confectioners' sugar in large bowl. Add chocolate mixture; stir together. Let stand 30 minutes. Form in 1/2 inch balls. Roll in cocoa powder. Place in candy cups in covered container. Let stand several days for flavor to mellow. |
