Preheat your oven to 375ºF. Beat the eggs in bowl until thick and lemon colored. Add sugar, 2 tablespoons at a time, beat well after each addition. Blend in lemon juice, vanilla and almonds. Sift flour and salt together into separate bowl, add to egg mixture. Blend well. Stir in shortening. Drop dough by teaspoons about 3 inches apart onto lightly greased cookie sheet. Bake for 12 minutes. Remove from baking sheet while warm, let cool. Combine the confectioners' sugar mixture. Makes 4 dozen |
